Wine & Cheese…

De Angelis Wines has worked with Vivant Fine Cheese for about 4 years and together we have formed a team of cheese mongers and winemakers that has developed a number of incredible pairings over the years.  The owner of the shop is Danika, and her background and enthusiasm for her cheese is difficult to match. A graduate of the Dairy Science Program at Cal-Poly University in San Luis Obispo, Danika has developed a very nice retail and wholesale cheese operation. At any given time Vivant stocks about 150 cheeses from around the world and from California.  If you are anywhere near Paso Robles, CA, stop by and try a selection of cheeses — along with our wines, of course.  We can pretty much guarantee you will not be disappointed!

We have included a number of wine & cheese pairings below  that Vivant uses in their shop. These are but a selection of  very many choices, but it gives you an opportunity to see what can be done and done easily.   as importantly these pairings demonstrate that one can use wine and food together and do so in an elegant and wonderfully simple manner.  Vivant carries at least 4 of our wines at any given time. 2010 Sauvignon Blanc & Honey Bee

This 93 point (Cellar Tracker) Sauvignon Blanc offers only a hint of the classic grass flavor on the palate, and has a very nice, long finish. The Honey Bee cheese,  is imported from Holland, and is a goat Gouda with a touch of honey. This cheese is excellent for snacking and has a light, nutty flavor with a hint of sweetness, like honey roasted cashews.

2009 Viognier & Piave Vecchio

This wine is dry and pleasantly spicy with all of the characteristics of the Viognier grape: apricot, peach, and stone fruits. Piave Vecchio is an addictive cow’s milk cheese from Veneto, Italy. It has a concentrated sweet, crystalline paste with a mild hint of almonds and pineapple. This is a wonderful table cheese that can also be shaved over salad or pasta in place of Parmesan.

2007 Pinot Noir & Beemster Vlaskaas

This is a fruit-forward wine with a hint of oak and a bit of spice that garnered an average of 91 points on Cellar Tracker. Its fruitful flavors include cherries and blackberries, and the complex, yet understated  tannin structure hold up to a variety of cheeses. This cheese paired here is a classic Gouda is named for a region in Holland which is well-known for producing flax – in fact, Vlaskaas means “flax cheese,” owing not to an ingredient but to the plant that dominates the local countryside. The inside of this purple-waxed beauty is pale orange and dotted with a few tiny holes; the cheese is sweet, creamy, and tangy.

2007 Syrah & Midnight Moon

This Syrah is blended with a bit of Grenache, and is a very fruit-forward, complex wine. It has overtones of strawberries and cherries. Aged six months or more, this pale, ivory cheese is firm, dense and smooth with the slight graininess of a long-aged cheese. The flavor is nutty and brown-buttery, with prominent caramel notes.

Since you now know that Danika carries at least 150 different cheeses, and she also carries at least 4 De Angelis Wines at any time, it is simple to calculate how many combinations and permutations of pairings one can achieve. We will not bore you with the math, but let’s agree that the hundreds of thousands – or maybe millions of possible pairings  – will keep all of us busy for a long, long time!
